Apple Panna Cotta

Serves 6-8
1 Tablespoons of We Olive Arbequina Extra Virgin Olive Oil
1/2 cup of Apple Cider + 1/4 cup
2 Teaspoons of Gelatin
1 cup of sugar
1 cup of whipping cream
1 cup of buttermilk
Garnish: 1/2 cup of apple cider
2 cups of diced apples
1/2 cup of We Olive Apple Balsamic Vinegar or We Olive Mulled Spice Balsamic Vinegar
Directions:Brush 6 plastic cups of ramekins with olive oil. Add 1/2 cup Apple Cider and sugar to a sauce pan and bring to a boil. Once boiling and sugar is disolved, remove from heat. Immediately add cream and buttermilk. Place 1/4 cup of cider in a small bowl and sprinkle gelatin and combine. Once apple sauce consistency Add gelatin mixture to hot liquids and stir until dissolved.. Divide among ramekins or cups. Chill until set at least 4 hours or overnight. Run knife around edge of ramekins and flip onto a plate. For garnish combine all ingredients in a saucepan and simmer for 8 minutes. Pour over panna cotta to garnish.
